Rise n' Shine!


Get up, get up, get out of bed.....
wake up now you sleepy heads!
Rise n' Shine, it's time for breakfast!




I love breakfast food.  It is ironic that I say this since I don't eat it as frequently as I should, at least not during the weekdays.  I fill myself with my two cups of coffee each morning and am usually fine with that until lunch.  Unhealthy?  I know, I know.  I don't know what it is about the weekdays and rushing around that has me skipping the most important meal of the day, but it is a bad routine that I have going and it is something that I am changing.


I also love to make breakfast on the weekends when the kids and my husband are all  home and we are together.  My husband makes great breakfast meals too and I loooove when he cooks. 
There is just something about a man flipping pancakes for his kids...lol!

There is also something to be said about waking up to the smell of breakfast cooking.  Pancakes and bacon cooking one floor below can make the sleepiest teen rise from her slumber quicker than a pail of water, at least in my house it can!



 Sometimes we have a "Backwards Night" at our house and we serve breakfast for dinner.
This is my children's favorite type of dinner, they love it. I have to say I do too, it is easy to prepare and easy to eat. 



Our gals (the chickens) are laying about 4 eggs a day even now in the cold weather, so it looks like we'll be using them up in what ever I decide to make for this weekend's breakfast.  My husband is quite proud of his chicks, and I have to say that there is definately a difference in fresh eggs.  The shells are harder, and the yolk is much brighter than store bought, and something about them just tastes better. 
Well they are just HENHOUSE FRESH!

Occasionally I like to have a bowl of cereal too. 
It's a quick and easy breakfast, and I am rediscovering some of my favorites,
frosted mini wheats is one of them.


Granola is another one of my favorites, served with milk or as a parfait with strawberry yogurt with fresh fruit on the side.  It tastes especially good served in the good dishes, lol




French toast, my all time favorite, I have to use texas toast to make it though. 
The thick slices taste better.





Another favorite, corn cakes.  I serve with a pat of butter and swirl syrup and honey on top.




Oatmeal muffins, easy to take and go.....eating on the run?  My teen daughter is usually running out the door each morning, these are a great alternative to the junk teens want to eat.




I was thinking about the days when mothers made these fresh breakfasts each and everyday for their families.  They would rise with the sun and have it all ready to go when their families decended the stairs.  My grandmother had 8 children and raised her family this way.  She lived to cook and care for them and everyone else too.  I am not sure this could happen every day of the week in my house, so I just stick to aiming for the weekends for now, lol.  There was a reason everyone thought grandma was a superwoman!

At the breakfast table we are able to reconnect after a busy week, between sports, school clubs, homework and traffic during the week.  There is at least the weekend when we can all sit around the table enjoy good food and catch up before our day begins. 

If you haven't tried corn cakes before, they are too easy.  Pick up a box of jiffy corn muffin mix and the recipe is on the side of the box.  They are inexpensive to make too.  If you like cornbread, these are similar...only better and not as dry.



My son loves to make these with me, the little pieces pop in the pan, like magic.....
and he cracks up.


I am working on changing my eating habits to a more healthier version (I dare not say that I am dieting, since my altar ego will sabotage my efforts by eating a whole box of chocolate, yes it does happen!).  The healthy part entails making sure that I am eating three meals a day....no more skipping breakfast.  I don't eat pancakes and bacon every day but I am making the time to take care of myself, something that alot of mothers put off because they are so busy tending to their families, and sooner or later it catches up with you. We get so caught up in putting everyone but ourselves first!  I am now acknowledging that it is important that I do this so that I can take even better care of my family.

So I have been sitting down each morning after my kids have left for school with breakfast and my coffee, I catch up on my mail and browse through my recipe books, gearing myself up for the day.
 


I can't get rid of the coffee though....don't think I'll ever be able to do that, ha!
Oh, I'm so scary without my morning coffee.....lol.

I even talk to it.....I say hello "friend" each morning....
and my kids think I'm nuts for sure...
but they know it takes the monster away, and I stop growling.  He,he,he!

    P.S. In your photo album on the sidebar, there is a picture of a beautiful pot rack. May I ask where you purchased it? I have been looking for one for years, and I love that one!

  2. YUm, corncakes sound good. I'll have to go to the store and get a box of jiffy mix. I love breakfast foods too. I know I need to make some changes in my food plan, and am dreading having to give up some of my favorite things.

  3. Breakfast is defiantly my favorite meal. I love everything biscuits and gravy, pancakes, bacon, sausage, you name it I love it. That may be why I can no longer fit into any of my clothes. I don't fix much during the week usually just oatmeal or cereal. We have chickens too I love farm fresh eggs and we have them often (when they are laying).

    You have the most beautiful blog! The pictures are so lovely and vintagy!!

  4. I always enjoy my visits here and today was no exception :) Those corn cakes look yummy and I will try them. Hubby is not a big fan of pancakes (I am), so I'll try these & see. We usually try to have a big Sunday brunch - bacon, eggs, biscuits and gravy are the mainstays for that. But depending on my time and what's available I may add in other things. It's never our healthiest meal of the week ~ that always rings true! Oh, and.. Thanks for the reminder to take care of ourselves too - very important and I do forget also :) -Tammy

    I can't give up my coffee either. I am terrible at eating breakfast, and almost never eat it. I do love granola though.. I should pick some up.

Hey Dee, amazing the memories that breakfast brings back huh?..my mom used to make breakfast for dinner too...I never craved it and it always rubbed me the wrong way till I ate it..It still doesn't jive well in my brain and as a married couple we have only had it maybe 4 times in the 24 years we have been married..now breakfast is a whole other story..we do the breakfast thing on our weekends..hubby usually makes bacon/or sausage and eggs and toast/or bagel..I like making texas french toast, waffles or pancakes..one breakfast that has been so yummy and really decadent is buckwheat pancakes with egg salad on top then smoked salmon and a dollup of sour cream...or cavier..our next door neighbors introduced us to that one...oh my gosh it is good..my hubby can't live without his coffee either..says he will divorce me if we ever run out..he hates making it too..I don't drink the stuff..but I make his..:) my everyday breakfast is usually a bagel one side with butter and honey and the other side with chunky peanut butter with honey..occasionally I shake it up and put jam on them..lol..thanks for the memories...I always love stopping by for a visit..and I alway love the eye candy you provide..feels like coming home..:)

  7. your post made me think of living with my grandparents when i was a teenager--every weekend morning i awoke to the smell of bacon sizzling, coffee brewing and the not-so-subtle sound of pans being thwacked against each other! :) i loved it and i still love going back home and getting the same treatment (although, now that they're much older, they sleep a little later and they try to be quieter since my husband and i bring our three year old with us!) is that your white enamel 'cake' container on the counter? where did you get it?????

  8. Breakfast is just about the only meal I enjoy cooking, but with two working parents & a commuting college student, we don't often have it together, so breakfast-for-dinner is a frequent occurence :-P
    On working mornings, I make oatmeal with half milk/half water, cranberries & pie spice, or a toasted whole wheat muffin w/a fried egg & a piece of fruit; usually on Saturdays, whoever wakes first~ 50/50 between myself & Hubby (he's use to being up & gone by 5:30 am)~ will make breakfast for everyone.
    My favorite is eggs, bacon, english muffins with jam, fresh fruit & hot tea (the guys prefer coffee) I'm not a pancake person, but I'll make them for the guys or compromise with waffles~ I think they'd like the cornmeal recipe.

  10. I eat breakfast every day - usually oatmeal and often pumpkin oatmeal. I love anything corn and we make corn waffles but now I am going to have to try corn cakes!

    Once again another wonderful post :) As a little girl my mom used to make breakfast for dinner as a special treat. My dad still to this day has eggs for dinner at least once a week. I too like to cook breakfast. Eggs, bacon, fried potatoes and toast but I must admit as of late my husband and I have been going on a Saturday morning date to the local pharmacy. Sounds kind of funny but they have the most wonderful old lunch counter in the back of the store. With a big old griddle and the best coffee it has become our favorite place for breakfast. I usually choose the pancake special--two GIANT pancakes and bacon for $1.99. My husband's favorite--two eggs, scrambled, sausage link and toast for $2.50. You just can't beat it. (except for your house it sounds like :) ---fresh eggs YUM!!!)

  13. I just stumbled upon your sweet blog. Guess what? I just had scrambled eggs and turkey bacon for supper. Which I frequently do. I always have Kashi cereal with sliced fruit for breakfast. Your blog is very colorful and enticing, by the way!

  14. Favorite breakfast food? It would have to be toasted homemade bread. Unfortunately, I don't get to eat it often because I don't bake bread as often as I'd like. I love the idea of the corn cakes!

  15. i am a bad wife and don't make breakfast alot and the good husband loves to make it! loved your post! loved hearing about your grandmother. i too wonder how our grandmothers did it all and think about them a lot! ;`)

  16. Oh boy lets see here...watching the waistline it would be toasted English muffins with peanut butter...throwing caution to the wind...sausage gravy with homemade biscuits and homemade apple butter!! Oh and can't forget the bacon!! :)

  18. MMMMMMMMMMMmmmmmmmmmmmmmmmm! I love breakfast foods too! I make my hubby's breakfast every morning, but rarely cook any for myself. Most of the time, I will have a piece of peanut butter toast, a banana and a cup of milk.
    And we have breakfast for dinner quite often! Love it! And it gives more time to be elaborate if I want to.

  19. We are on an apple/raisin oatmeal kick. I peel and dice an apple, put in a handful of raisins, a pat of butter and a dash of cinnamon. I "saute" them until the apples just begin to soften. Then I add a cup and a half of rolled oats, some water to cover, and a dash of salt. I boil it all until it has the right "oatmealy" consistency. Put in bowls and push to one side with a spoon. Sprinkle with cinnamon sugar and pour milk on the cleared side so the oatmeal looks like an island.

  20. Ok, I'll admit it, I LOVE BACON, especially when I caramelize it with a it of good Maine maple syrup.

    My grandkids love breakfast for dinner (so do I). We have a big, old jar of our own homemade pancake batter fixings in the cupboard. Also, a big supply of wonderful cookie cutters (without handles). The kids use the huge iron frying pan to make animal and bug pancakes. Each child has a favorite.

    Also, BLUEBERRIES, freshly picked from the patch in front of our little cottage in Maine. When that is picked clean we buy baskets of berries and freeze them for breakfast.

  22. I cook a hot breakfast almost everymorning for my teenage children -- 18, 15, 12.
    The 18 year old is up at 5:30 am to get to his zero hour class. This morning it was french toast from leftover homemade bread, sausage links and oj.
    I find if I do all the prep work including putting out the pans I need the night before, breaksfast is so much easier in the morning.
    I always pre cook my breakfast meats the day before so all I have to do is reheat in the morning.
